Messy kitchens, crazy moms, and like 15,000 people trying to cook at once….In other words, it was good.

I know it’s past Thanksgiving. I know I’m lazy. But, I also know that Christmas is right around the corner (!!), and this dish never gets old.

I made it for our Thanksgiving feast, and I even ate it cold for breakfast (not the healthiest choice…). What I’m trying to say is it’s that good. Eat it cold straight out of the tupperware kind of good.

Yes, I just gave you that excuse. My family has used it for years. In fact, this year, I ate it for dinner AND dessert!

This recipe came to me after years of drooling over it every Thanksgiving when my Aunt made it. Lucky me!

Writing this post is making me very sad because I forgot my stupid lunch today. It was in the car, and I just didn’t grab it. I’m in 2nd block “studying” in the library, and my stomach is whining to me in its weird grumbly language. I’M HUNGRY. And I want Cranberry-Apple Bake. Like now. Mom?? Help??

*I am intentionally moving away from that subject*

Speaking of Christmas, I have eight of my gifts done already. I am ridiculously and probably unreasonably proud. I love the smell of evergreens and the sweet, sweet harmony of Cherish the Ladies. Soooooo good. Our tree is laying pathetically on our front porch, but this weekend, this weekend will be fabulously Christmassy (Christmassie??)!

Luna is so very photogenic. I am rather jealous.

Cranberry-Apple Bake

  • 3 cups diced apples
  • 2 cups fresh cranberries
  • 1 cup of sugar
  • 1 cup roughly chopped pecans or walnuts
  • 1/2 cup brown sugar
  • 1/3 cup gluten-free flour blend or mix of your choice
  • 1/2 cup gluten-free rolled oats
  • 1/2 cup melted margarine

Preheat oven to 325° F. Mix the apples, cranberries, sugar, and nuts together in a large bowl. Arrange this mixture in a baking dish. In a separate bowl, combine brown sugar, gluten-free flour, oats and margarine. Spread this mixture on top of the cranberry and apple mixture. Bake for 1 hour or until the top is nicely browned.

So. I wish you a merry last two weeks before winter break and many, many chances to devour this delicious concoction.
